A brewery in Nihonmatsu, Fukushima, is making sake that is quite literally out of this world, as seen on Thursday.
Ninki Inc. Brewery is using yeast that travelled in June from the US to the International Space Station in two capsules of about one gram. They stayed in orbit for about one month, before heading back to Earth. The yeast is now being brewed by about 30 breweries in the northeastern Tohoku region, an area badly affected by the earthquake and tsunami of 2011.
“I think this is a wonderful project that will help the Tohoku region to recover and share the same dream with many other regions. Also, of course, the finished product is made with great care and competition and has a great taste, so if you can drink this ‘space sake’ and support the recovery, it will be a great encouragement for us, the people of Tohoku,” Yujin Yusa, president of Ninki Inc said.
“It tastes like a small universe,” he added.
The project was conceived to mark the 10th anniversary of the 2011 disaster.
SOT, Yujin Yusa, President, Ninki Inc. Fukushima (Japanese): “In this project, we launched the yeast, Fukushima’s ‘Utsukushima Dream Yeast,’ from Florida in June, stayed on the ISS for about a month, and then it came back. That’s the yeast that came back. It is a yeast.”

Fukushima (Japanese): “A total of four bottles of the yeast that went to space and that did not go to space were brewed at the same time at the Industrial Technology Center in Fukushima Prefecture for testing and researching, and of the four bottles, the sake made with the yeast that went to space and came back was the most delicious.”
SOT, Yujin Yusa, President, Ninki Inc. Fukushima (Japanese): “As part of the reconstruction project for Fukushima and Tohoku, we sent seeds of local specialties to space, and since Fukushima Prefecture has many companies that produce sake, we decided to send the yeast to space for making sake.”

It was bottled just a week ago, and although it should have been sterilised and left for about two weeks, it’s still a little early, but I’m going to try it. Okay, I’ll open it. That sounds good. Well, I haven’t been exposed to the air for a long time, so I’m going to let it air out a little bit.”
