These shots were taken by the Japanese SELENE Lunar Orbiter/Kaguya spacecraft. Why can't we see stars in these pictures? Because the exposure of the frames when shooting was 1/60 of a second. The camera settings were for shooting the Moon. The moon is much brighter than the stars. Shooting requires different exposures. If we take a picture that shows the stars, the Moon will be a white blur with no detail. There is HDR technology, but it is almost never used in scientific shooting due to the fact that it can disfigure image details.
