Switzerland’s largest retail company Migros has developed a vegan alternative to a hard-boiled chicken egg, as shown by a company employee in Zurich on Friday.

Migros product developer Lucie Kendall was seen unpacking the ‘The Boiled’ vegan egg, which features an outer egg white and inner yolk, the same as a real egg.

“We had a lot of problems with imitating [chicken eggs]. The whole process took about 3 years, and we tried a lot for production and went through a lot of tastings,” said Kendall.

Kendall admitted that the taste has not been entirely replicated, but estimated that the plant-based alternative tastes ‘60 to 70 percent like an egg.’

The egg is manufactured in Switzerland by ELSA, a Migros subsidiary, and is the latest addition to the retailer’s V-Love plant-based range.

On the one hand you have the two components, the egg yolk and the egg white, and everything is protected by a super shell that protects it on a microbiological level. And we had a lot of problems with imitating those things (chicken eggs). The whole process took about 3 years, and we tried a lot for production and went through a lot of tastings, and you can think of this whole process as putting a Lego set together.”

SOT, Lucie Kendall, Migros product developer (German): “Here you see the egg, the white masses and the yellow, both are based on soya. The two parts are also very different, the outside is rather soft and rubbery, and the inside is soft and creamy.”

SOT, Lucie Kendall, Migros product developer (German): “Yes it tastes quite similar to an egg, of course not 100 percent. To estimate approximately, I would say it tastes something like 60 to 70 percent like an egg.”

SOT, Cristina Maurer, Migros spokesperson (German): “A vegan alternative to an egg, ‘The Boiled’ is something brand new. There was nothing like this before, and it was also met with great interest from the media that led to a lot of people wanting to try them. People came to our stores to buy the egg and since then it’s sold out every week. We have received different feedback from customers. Many find it cool and say it is a great Innovation, and vegans can finally eat an egg roll again. On the other hand, there were critical voices of people who say it doesn’t suit their taste 100 percent.”

SOT, Cristina Maurer, Migros spokesperson (German): “Yes, we have examined it, we wanted to know if the egg was good not only for wildlife but also for sustainability, and we found out that our vegan alternative produces up to 70 percent less CO2.”
