2018 Ultimate Ramen Eating Competition Hakata Ikkousha Manila Festival Mall Alabang. Hakata Ikkousha is a ramen house from Fukuoka Japan started by Chef Kousuke Yoshumura on March 2004. The name Ikkousha means one(一) happy(幸) place(舎) as the founder dreamed of creating a place that would delight its customers with its delicious and comforting bowls of ramen. The first franchised branch in Manila Philippines was opened on March 3, 2018 at the new expansion wing of Festival Mall by Japanese businessman Tomoda Shigehiro and his Filipina wife Marivic. This launch brings another respected Japanese ramen house into the crowded Ramen scene of Manila which includes Ippudo, Ikkoryu Fukuoka, Hokkaido Santouka, Kichitora, Sigekiya and Tsuta. The classic bowl of tonkotsu ramen is Ikkousha's pride. A rich, creamy tonkotsu broth envelops their in-house noodles, with tender chashu braised pork slices and toppings to complete the authentic Hakata ramen taste. The tonkotsu broth is made from meticulously prepared pork bones and cartilage, simmered over a long period its what gives Hakata ramen its identifiable flavor and rich, milk white creamy consistency and umami bubbles. They pair this with noodles made in their own factory: thin, yet filling noodles that bring in the flavor of the broth with every bite. To top it off are delicate yet satisfying slices of chashu (braised pork shoulder).
