Valentine's Day 3 courses menu for 2
Salmon tartare:
200g of salmon
1/4 cup of cucumber brunoise
1/8 cup of Granny Smith apple brunoise
1/4 of the apple - sliced for garnish
1 tea spoon lemon zest and juice
2 tables spoon minced dill
2 tables spoon plain greek yogurt
1 radish to garnish
fleur de del and black pepper - to taste
3 beetroots -boiled and peeled-
1 table spoon olive oil
1 table spoon honey
1 tea spoon lemon juice
water - depending on the size of the beet, just to make it more liquid
Duck risotto:
1 table spoon olive oil + 5 knobs of butter
1 cup of arborio rice
around 3 cup of duck broth
asparagus
1 cup of Parmigiano Reggiano
1 table spoon 35% cream
2 duck breasts
salt/pepper
same radish to garnish
1 tea spoon lemon zest
Textures of chocolate:
2 handful of dark chocolate
cream+milk until liquid
1/2 cup strawberries
1 table spoon sugar
1 table spoon honey
water - to cover
1 oz of Sailor Jerry spiced rum
2 quenelles of Häagen Dazs vanilla ice cream
2 Dad's cookies
