How to cook fresh Anchovies хамсия
Ingredients:
1kg of super fresh Anchovies
Corn flour
Sweet paprika
Crushed black pepper corns
sea salt
Sunflower oil for deep frying
Gut anchovies by holding had with knife blade and gently pulling fish away; head and guts will be easily removed.
Wash them thoroughly after gutting (no need to scale there are none!)
Drain well.
Mix corn flour, paprika, pepper and salt in a plastic bag, liberally coat the fish and then deep fry until corn flour is golden brown in color.
Drain well over absorbent paper to remove excess cooking oil.
If required add more salt to taste.
Usually anchovies just go to get salted and preserved but when you can find them fresh or catch them yourself, try cooking them like this, Anchovies (хамсия)are simply delicious!
