Months ago a viewer asked for a cranberry orange bakery style muffin recipe and I'm finally delivering on my promise to share a recipe. But first, I had to create the recipe because I knew what I had in mind and couldn't find exactly that online or in any of my MANY cranberry cookbooks. ?Orange Zester (for nice big peels of zest) https://amzn.to/2EaCg9L C R A N B E R R Y O R A N G E B A K E R Y S T Y L E M U F F I N S ?Stir together: 1 1/2 cups flour, 1/2 cup sugar, 1/2 tsp. salt, 1 Tbsp. baking powder, zest from 1 orange ??Whisk in separate bowl: 1 egg, juice from 1 orange with water to total 2/3 cup, 1/4 melted shortening Add wet ingredients to dry and mix gently. Stir in 1 heaping cup of fresh or frozen whole cranberries. Grease 12 cup muffin pan and fill with muffin batter. Mix together to make large crumbs: 1/2 cup flour, 2 Tbsp. sugar, 3 Tbsp. butter Crumble topping on muffins tops. Bake at 350 for about 17-20 minutes. Allow to cool to just barely warm before eating.
