Recipe:

Chocolate sponge mixture:
- 5 eggs, separated
- 2/3 cups (130 g) sugar
- 1 tbsp vanilla flavored sugar
- orange peel
- 3/4 cup (100 g) cake flour
- 1/3 cup (30 g) cocoa powder
Chocolate cream:
- 1 1/4 cups (300 g) whipping cream
- 1/2 cup (75 g) chocolate chips
Finishing:
- grated chocolate
- 1/4 cup (50 g) chocolate chips
Baking:
- 428 °F (220°C), bake for about 8 minutes
- prepare the chocolate cream the evening before
- Homogenize the chocolate cream after boiling up and melting (put immersion blender into and stir for one minute)
- preheat oven at the beginning
- don‘t bake for too long, otherwise the pastry will break when rolled
- after baking: put the pastry on a sugared dishtowel
- Then put a wet dishtowel on the baking paper.
- Alternative: Peal away the paper and roll the pastry
- decorate with melted chocolate chips
- You can use milk chocolate chips or dark chocolate chips
