Notes: Wait till the oil is cool. Never refrigerate your oil. Keep it on the stove ready for use. Keep it clean. Replace your oil when it begins to have a burnt flavor. It lasts a good long time. Use this oil for your roux or add a small amount to beans and vegetables. Frying potatoes further cleans the oil, and they take on a marvelous flavor. Fish taints your oil so don't use your cooking oil for fish unless you intend to discard it after the fish fry.
