Spaghetti and Fish Sauce don't sound like a classic combination, but believe it or not, this is actually a pretty authentic Italian recipe. Except I'm using premium Vietnamese fish sauce in my version. Salty, a little smelly, and slurpable, this is exactly the kind of Nood I want to receive. RECIPE (Serves 2) Ingredients: 3 cloves garlic, peeled and sliced 2 tablespoons olive oil 1/2 teaspoon dried chilli flakes 1-2 tablespoons high-quality fish sauce, or to taste 220g dried spaghetti Fresh basil or Italian parsley, to garnish 1. Boil the spaghetti in lightly salted water until not quite al dente. It should have a noticeable bite in the centre. 2. In the meantime, heat the olive oil in a deep sauté pan on a medium heat. Add the sliced garlic, and cook for a minute to let the flavours infuse. 3. Add the dried chilli flakes to the pan and immediately take off the heat. Let the pan cool down a little. 4. Add 1 tablespoon of fish sauce to the pan, stirring to incorporate. 5. When the pasta is ready, transfer it to the sauté pan, along with 1/2 cup of the cooking water. 6. Put the pan back on a high heat, and stir to emulsify while coking the pasta. If the pasta needs to cook some more, add more pasta water. 7. Taste the pasta, adding more fish sauce if necessary. When the pasta is perfectly cooked and the sauce is glossy and clinging to the spaghetti, stir in some fresh basil or parsley.
