Watch some of my grocery shopping as well as my meal prep for my school week! This meal prep is entirely vegan and loaded with protein to support my active lifestyle.
I will be making French Five Bean Soup for an easy freezable dinner I can pull out for nights when I get home late, chia pudding cups for a grab and go breakfast, some fresh gauc as a snack or meal topping, and freezer burritos that are perfect to pack in my lunch box.
The soup mix I'm using is by Sierra Soups which you can purchase at Ikeda's market (if you live locally!) or if you prefer to shop online, follow this link to purchase on amazon and check out some of their other flavors!

Ingredients you will need for each recipe:
Soup:
- 1 soup mix (yeilds 6 generous servings)
- 1 leek
- 8 cups of water
Chia pudding cups:
- 1/4 cup chia seeds for each cup of liquid
- 1 cup unsweetened almond coconut milk
- maple syrup to taste (I use 1 tbs)
Guacamole:
- two avocados
- two slices of red onion (diced)
- 1/2 a small tomato (diced)
- 1/2 squeezed lime
- cilantro, salt, garlic powder to taste
Freezer Sweet Potato Burritos: (yields 6 burritos)
- 1 1/2 cups toasted cooked quinoa
- 3 cans low sodium black beans, rinsed
- 1/2 bell pepper (optional)
- 2 slices of yellow onion, diced
- 2 sweet potatoes
- 6 tortillas (I use the ones from trader joe's)
- cilantro
- some type of curry flavoring***
***I used curry powder, Thai spice, salt, and garlic powder, but you may like it better to make a yellow curry sauce with coconut milk to simmer the beans in (not a lot of liquid, but some). You can also add toasted coconut and/or peanuts to the burritos as well and it would taste great! Try experimenting and see what combinations you like the best :)
