If you want the skin on, simply wash chicken in cold water, dip in 160 - 180 degree water for about 15 seconds, pluck all the feathers you can, dip again for 10 seconds and clean up the rest of the left over feathers. It will be as clean as a store bought chicken. I highly recommend some of the Gorilla Grip gloves for plucking. Makes the job go significantly faster.
