Ingredients:
4 ripe avocados
2 limes
300 ml double cream
200 g caster sugar
waffle ice cream cones, to serve
150 g melted white chocolate, to serve
coloured sugar sprinkles
Step 1: Blend Your Cream And Sugar
Whip up your cream until it begins to thicken and then pour in the sugar. Continue whisking your cream for another minute until the sugar is combined and the cream is thick.
Step 2: Blend The Avocado
Scoop out the flesh of four ripe avocados by slicing them in half length ways and using a spoon to remove the flesh. To prevent the avocados from going brown sprinkle over a bit of lime juice. Pour the avocados into a food processor, along with the juice of 2 limes, and blend until smooth.
Step 3: Make Up The Ice Cream Mixture
Pour the cream and sugar mix into a freezable bowl or container, and then spoon in the blended avocado. For an extra touch grate in some milkchocolate. Mix everything together and then place the ice cream in the freezer for a minimum of 3-4 hours.
Step 4: To Serve
For a great way to serve the ice cream, dip your waffle cones into melted white chocolate and then into sugar sprinkles and leave to set. Remove the ice cream from the freezer a few minutes before you need it to help it soften, then scoop into the cones. Serve immediately.
