The machine allows you to buy digital currency by generating a cryptographically-signed message which when entered online allows the operator to verify how much money you entered into the machine. Using that information, the operator sends you the amount digital currency owed in exchange for your fiat currency.
Similarly, if you send digital currency to the operator, they can generate a cryptographically-signed message which when entered into the machine tells the machine how much fiat to dispense.
