PULLED PORK SLIDER RECIPE:
5—7 lb pork shoulder or butt
3 cups tomato puree
3 cups of BBQ sauce
3 tbsp smoked paprika
3 tbsp kosher salt
3 tbsp canola oil
1 tbsp cayenne pepper
2 tbsp cracked black pepper
2 tbsp ground cumin
3 tbsp garlic powder
1 bay leaf
House pickles (recipe below!)
Mini brioche buns (or any small, soft bun)
Sharp cheddar cheese
1. Season pork shoulder or butt with smoked paprika, cayenne pepper, kosher salt, cracked black pepper, cumin, and garlic powder. Thoroughly rub the dry spices all over the meat.
2. Heat canola oil in large rondo or deep sauté pan on hight heat. Add sesasoned pork and carmelize the meat for 5—7 minutes on all sides.
3.Once the pork has a beautiful, dark, golden brown sear on all sides, add 3 cups of tomato puree, 2 cups of your favorite BBQ sauce, and 1 bay leaf to the pan. Cover with aluminum foil and bake at 400 degrees (F) for 3 hours.
4. Pull the pork out of the oven, uncover it and allow to cool for 30 minutes. Once cool, remove any excess fat that’s visible and begin to shred the pork with two forks or your hands (use gloves if you go this route!).
5. Add the remaining 1 cup of BBQ sauce to the shredded pork and heat for another 10 minutes on high heat until sticky.
6. Slice 12 or so small brioche buns in half and place the bottom half of the bun on a baking tray. Dollop a decent portion of shredded pork on the bun with a bit of BBQ sauce and a slice of sharp cheddar cheese.
7. Broil the half-built sandwiches for 2 minutes or until the cheese is melted. Finish it off with the homemade pickles, top with the other side of the bun and ENJOY!!!
QUICK PICKLES RECIPE:
1 hot house cucumber
1 cup white wine vinegar
1 cup water
1 tbsp coriander seeds
1 tarragon stem
1 tbsp black peppercorns
3 tbsp sugar
3 tbsp salt
1. Fill a small sauce pan with white wine vinegar, water, salt, sugar, coriander seeds, tarragon stem, and black peppercorns. Cook on medium heat and bring to a simmer.
2. Pour the hot pickling liquid over 2 cups of thinly sliced hot house cucumbers and allow to pickle for 2 hours (15-30 mins if you’re in a hurry) in the refrigerator.
CRANBERRY MIXTURE RECIPE:
8 oz. fresh cranberries
1 cup sugar
1 cup water
1. Bring cranberries, water, and sugar to a simmer over medium heat.
2. Once simmering, bring heat down to medium-low and cook for 10 minutes.
3. Remove from heat and strain berries from the heated liquid.
SINGLE CRANBERRY MOJITO RECIPE:
5-10 mint leaves
1 tbsp lime juice
2 oz. cranberry mixture
2 oz. rum
3 oz. soda water
Cranberries for garnish
Ice
1. In a single glass, muddle mint leaves with lime juice.
2. Add cranberry for garnish.
3. Add rum, cranberry mixture, soda water, and ice. ENJOY!!!
