Toast spices in a large pot over low heat for 5 minutes. Chop onion, ginger and galangal, and add to a large pot with water, soy sauce, sugar, and dried mushrooms. Boil over low heat for several hours. Soak noodles in hot water for 5 minutes, drain, and place in a bowl. Add mushrooms and bok choi to the bowl. Sprinkle bean sprouts on top and add boiling stock. Garnish with cilantro, green onion, basil, chili, lime juice.
