RAGI CHAKLI / NACHNI CHAKLI -

INGREDIENTS
• Ragi flour – 1 cup
• Rice flour – ½ cup
• Chutney dal / daria dal / roasted gram dal - ¼ cup
• Butter – 1 tbsp at room temperature
• Chilli pwdr – ¼ tsp or ½ tsp or as per taste
• White sesame / til – 1 tsp
• Asafoetida – a generous pinch
• Salt to taste
• Hot oil – 1 tsp
• Oil to deep fry
• Chakli press
PREPARATION
1. Grind the roasted gram dal into a fine pwdr . Sieve it .****We need exactly ¼ cup of sieved flour .
2. Sieve the ragi and rice flour also.
3. Dry roast the ragi flour on low flame till it becomes hot to touch and aromatic.[ don’t over roast ,also don’t let the colour changes ]
METHOD
Take all the 3 flours in a big plate ,add butter + asfoetida + chilli pwdr + sesame seeds + salt and mix with clean ha nds .
Now add water [ roughly ¾ cup ] little by little and knead it into a soft and stiff dough [ taste salt and adjust ]
Cover the dough with a damp cloth to avoid drying .
Heat the oil in a deep pan .
Add 1 tsp hot oil to the dough and mix again .
Grease the chakli press with little oil .You can take any disc .[ I have treid with star hole / plain hole / sev hole ]
Take a portion of the dough and fill the chakli press .
Once the oil becomes hot ,lower the flame to medium .
For star disc make chaklis on the back of a ladle and slide it into the hot oil .[ be careful as the oil is hot – maintain a distance between the hand and the kadai .
Once the chakli comes up to the surface ,turn and fry on the other side .
Fry till the bubbling and ssshhhhh frying sound stops. [ Be careful because of the chakli colour , its difficult to find out whether it is fried or not – don’t over fry it ]
Drain and remove on an absorbent paper .
Allow it cool and store it in a airtight container .
Shelf life 2 or 3 weeks .
NOTES
1. To check if the oil is ready for frying ,add a tiny piece of dough in the oil ,if the dough raise up immediately – it means the oil is ready for frying .
2. You can add a pinch of baking soda .
3. Instead of sesame , you can try jeera .
4. Instead of grinding gram dal , u can try ¼ cup besan .
5. If he dough is dry add little water ,if it is wet add little rice flour .
6. While making circle chaklis if the dough breaks ,then add few drops of water and knead the dough again .
