Stephanie Manley: Hi everyone! This is Stephanie Manley with copycat.com. I love Rudy's Barbeque Creamed Corn! it is a fantastic recipe, one that was suggested by people just like yourself. So here we go: this recipe is very, very simple. You will going to need just a few things: frozen corn, we're going to use whipping cream, some cream cheese, we're going to use some salt, and we're also going to use some sugar. So let me show you how to put this recipe together. You're going to have their creamed style corn in no time.
The first thing we need to do with this creamed corn is we're going to use a pint of heavy cream. Don't use milk or half and half for this. Treat yourself, enjoy heavy cream for this. It's going to make it have a very nice mixture. You're going to use four ounces of creamed cheese, we're going to put this in here. I'm going to let the creamed cheese get to where it will melt so in the meantime we'll go ahead and add the sugar, we're going to add the salt as well, and if you like fresh cracked pepper, you can always add just a little bit before serving, so as soon as this creamed cheese melts we're going to go ahead and add in our corn and we'll almost be done.
So now that my creamed cheese has melted, I'm going to go ahead and add in my corn. Now, I say to add in 16 ounces of corn. My corn is only 10 ounces a bag. So I'm going to go ahead and add just part of the second bag of corn. So that's pretty much it; once this corn heats up fully, you're going to be ready to serve your own version of Rudy's Creamed Corn.
