Tricia's Creations: Mini Pumpkin Empanadas

This is the easiest and quickest way to make a bite size dessert that can be made with different fillings. I wanted to create something in a bite size that my family could enjoy along with the rest of dishes and desserts we'd have for Thanksgiving. They came out great, the crust is flakey and the filling is perfect, not too sweet or bland. Try this your way but I highly recommend using the already made pie crust dough.
