Voskos Broccoli-Pea Soup
Ingredients:
1 onion, chopped
2 carrots, chopped
2 celery sticks, chopped
1 large head of Broccoli or 2 small heads
½ cup frozen peas
2 large potatoes, cubed
Salt & pepper
1 tsp. garlic salt
1 tsp. cumin
4 cups Chicken stock or Vegetable stock
2 tbs. plain Voskos Greek yogurt
Directions:
In a large pot, coat bottom of the pan with olive oil. Sauté onion, carrots and celery until tender, about 5 minutes. Season with salt, pepper, garlic and cumin. Add the potatoes, broccoli, and peas. Sweat another 5 minutes. Add 4 cups of chicken stock, cover and simmer for 15 minutes. Turn the heat off the stove and take lid off. Allow to cool about 5-10 minutes. Using an immersion blender or regular blender, puree the soup until all the vegetables are pureed. Half way thru add 2 tbs. plain Voskos Greek yogurt and continue blending. Serve hot
Optional add in's: cheddar cheese or deiced hot dog.
